Sidney Wilfred Mintz November 16, — December 27, was an American anthropologist best known for his studies of the Caribbean , creolization , and the anthropology of food. Mintz received his PhD at Columbia University in and conducted his primary fieldwork among sugar-cane workers in Puerto Rico. Later expanding his ethnographic research to Haiti and Jamaica, he produced historical and ethnographic studies of slavery and global capitalism, cultural hybridity, Caribbean peasants, and the political economy of food commodities.

Studying a single food or commodity such as sugar may seem like an incongruous project for an anthropologist who claims to work mostly with living people. Still, it is a rich subject for someone interested in the history and character of the modern world, for its importance and popularity rose together with tea, colonial slavery, and the machine era. Had it not been for the immense importance of sugar in the world history of food, and in the daily lives of so many, I would have left it alone.

Finally, I will also attempt to point out some of the shortcomings of the book. Mintz begins his book with a historical account of how the knowledge, production, and use of sugar traveled all the way from New Guinea to the Americas. He points out that the knowledge, production, and use of sugar is very much tied up with themes of conquest and control.

Sugarcane was originally domesticated in New Guinea and refined to produce sugar for the first time in India. Trade and expansion of Islam had brought very small quantities into Southern Europe by the early decades of the eighth century CE.

However, it was the Crusades that carried the knowledge of sugar to Northern Europe in the eleventh century CE. Eventually, sugar reached the Atlantic Islands and from there to the Americas as a result of the Iberian imperial project. The production of sugar in these new regions, just like its spread, was essentially a story of violence and control. The labor-intensive nature of sugar cultivation and the acute labor shortage in Europe because of the Black Death resulted in slavery becoming the chief form of labor on sugar plantations in the Eastern Mediterranean.

This system would eventually be replicated in the Atlantic Islands and finally in the Americas where it would take a racial and violent form. Mintz argues that these plantations in the Americas were an early form of industrial production.

According to him, these plantations were very similar to later factories in England that organized labor into units, enforced strict work routine, and separated production from consumption and the worker from his tools. He observes how, in just a few hundred years, sugar transitioned from being an expensive spice to being a part of a staple diet. Mintz makes very interesting observations about the power structures that made it possible for sugar to transition from a luxury to a necessity.

He argues that the popularity of sugar did not come from its physiological properties but because of the cultural virtues attached to it in its marketing to the English workers.

Mintz argues that diet is a social, not merely a biological, choice. Society determines what, when, and how we choose to eat. Similarly, the increased consumption of cheaper sugar was not a direct result of the 'sugar habit' but a product of the larger structural changes in the everyday lives of the poor as a result of industrialization. Despite the wonderful fresh perspective that Mintz offers, there are few problems with the book which I found unsettling. First, one has to be careful about generalization from Mintz's study of Britain.

He focuses mainly on Industrial Britain in the latter part of the study. Mintz does not tell us in detail about Asia, Africa, the Americas, or even other parts of Europe.

India, for instance, had a long history of using sugar. Mintz fails to tell us the story of sugar in these parts of the world. One must admit that in the initial part of the book he manages to show how sugar becomes a crucial link in the histories of Europe, Africa, and the Americas.

However, the study still remains highly centered around Europe, especially Britain. Second, at times, it is ambiguous whether Mintz is using the history of sugar to uncover truths about the society or whether he uses the social, economic, and cultural history of the world to complicate the history of sugar itself.
