In the first part of the course, the dynamic of spins in a magnetic field is described, leading to the essential notions of magnetic resonance MR , excitation and relaxation. We will also discuss the basic mechanisms of image reconstruction, MR spectroscopy and functional MRI. You will learn how existing physical principles transcend into bio-imaging and establish an important link into life sciences, illustrating the contributions physics can make to life sciences. Practical examples will be shown to illustrate the respective imaging modality, its use, premise and limitations, and biological safety will be touched upon.

While the hazards of ionizing radiation are now well controlled in most medical contexts [ citation needed ] , an MRI may still be seen as a better choice than a CT scan. MRI is widely used in hospitals and clinics for medical diagnosis and staging and follow-up of disease without exposing the body to radiation. Risks and discomfort may be associated with MRI scans. Compared with CT scans, MRI scans typically take longer and are louder, and they usually need the subject to enter a narrow, confining tube.

Modern challenges of food science require a new understanding of the determinants of food quality and safety. Application of advanced imaging modalities such as magnetic resonance imaging MRI has seen impressive successes and fast growth over the past decade. Since MRI does not have any harmful ionizing radiation, it can be considered as a magnificent tool for the quality control of food products. MRI allows the structure of foods to be imaged noninvasively and nondestructively. Magnetic resonance images can present information about several processes and material properties in foods. This review will provide an overview of the most prominent applications of MRI in food research. With everyday increasing importance of food quality control and wise use of nondestructive methods, corresponding technologies are increasingly being promoted [ 1 ].
